The Carnival Venezia, a former Costa ship that will begin sailing for Carnival on May 29, will have an Italian specialty restaurant called Il Viaggio -- Italian for "The Voyage."

Carnival promises a "journey across Italy through the country's rich and diverse cuisine." The line said each menu item, from appetizers to desserts, will be representative of an Italian regional specialty.

Guests will have the option of dining indoors or outside on the restaurant's lanai. In a show kitchen, guests will see kitchen staff baking the focaccia that will be served to each table.

"Through artwork and architectural touches that highlight the different regions featured on the menu, Il Viaggio's visual aesthetic will bring to life a nuanced portrayal of journeying through diverse Italian landscapes," Carnival said.

A sampling of menu selections from each of the three courses:

• Antipasti: House-made burrata with heirloom tomatoes and Genovese pesto, panzarotti (golden-brown puff stuffed with sausage and pesto), and suppli al telefono (crisp risotto croquettes with mozzarella and tomato sauce).

• Entrees: Pappardelle al cinghiale (ribbon pasta tossed with a meat sauce made with wild boar, shrimp scampi with lemon risotto, veal chop Milanese; and pasta alla Genovese (ziti topped with a slow-cooked meat sauce made with onion, San Marzano tomatoes and beef rib).

• Desserts: Mile-high gelato pie (salted caramel, mocha, toasted coconut and Chantilly cream), cannoli and tiramisu.

Reservations for Il Viaggio are now open for guests booked on upcoming Carnival Venezia sailings.

Carnival said the reservations fee is "in line with Carnival's other full-service specialty restaurants."

The Carnival Venezia will embark on a 15-day transatlantic sailing on May 29 from Barcelona. The ship is set to arrive in New York on June 15, when it will begin operating cruises from Manhattan.
